For our camping trip this summer, I asked my friends what their favorite muffins were. One said blueberry and the other said cinnamon streusel. So I thought to myself, why don’t I combine them? I premix the dry ingredients (batter and topping) so when I start to make the recipe at the campsite, I have less to do. The batter was thick and I definitely needed a sturdy wooden spoon to mix than the whisk that I started with (R.I.P. whisk).

I used my trusty cast iron muffin pan. You will want to make sure you spray it well with cooking spray before adding the batter. I also overfilled but even though it didn’t look like it would, the muffins popped out of the tin in muffin form.
